Blackberry Lime Chicken Wings

Ingredients:

  • 2 lbs. free-range chicken wings
  • 1 10-oz. jar blackberry jam
  • 3 Tbsp. fresh lime juice
  • 2 Tbsp. olive oil
  • 1 tsp. Jane’s Krazy Mixed-Up Sweet Lime Pepper
  • 8 oz. organic feta cheese

Directions:

  1. In a blender, combine jam, lime juice, olive oil and lime pepper.
  2. Whirl until smooth.
  3. Pour mixture into a 1 gallon re-sealable bag.
  4. Add chicken wings.
  5. Seal and shake to coat evenly.
  6. Refrigerate overnight or up to 24 hours, turning occasionally to coat.
  7. Preheat oven to 400º F.
  8. Line a large sheet pan with heavy-duty aluminum foil.
  9. Place wings in a single layer on foil.
  10. Bake for 45 minutes.
  11. Remove from oven and sprinkle with feta cheese.
  12. Let stand 5 minutes and then serve.

Servings: 8 (appetizer) or 4 (entree)
