Chunky White Bean Guacamole


  • 1 can (15-oz.) Eden® Organic Navy Beans, drained
  • 2 thin slices red onion
  • 20 sprigs cilantro (leaves only) and more for garnish
  • 2 large cloves roasted garlic or 1 small clove raw garlic
  • 3 – 4 Tbsp. fresh lime juice
  • 1/2 tsp. Eden® Sea Salt, or to taste
  • 1 ripe avocado
  • 1 can (14-oz.) Eden® Organic Diced Tomatoes with Green Chilies, drained


  1. Set beans, onion, coriander, garlic, lime juice and salt in food processor or blender.
  2. Pulse eight to ten times to create coarse mixture. Scrape down sides.
  3. Add avocado in chunks. Pulse until avocado is in small pieces (not creamed).
  4. Transfer to serving bowl. Stir in tomatoes and lime juice.
  5. Garnish with coriander and serve with Eden Chips.

Serving size: 2 Tbsp.

    This has become a standby in our house. Great as a party dip or just for snacking. We added mincec jalapeno for some extra zing.
