Fava Bean Crostini


  • 3 lbs. fava beans, shelled
  • 3 cloves garlic, smashed (divided)
  • 1 tsp. lemon juice
  • 3 Tbsp. Spectrum® Organic Extra Virgin Olive Oil
  • 1 baguette, cut crosswise into 1/2-inch slices
  • 1/4 cup parmigiano-reggiano, shaved


  1. Heat grill to medium. Fill a mixing bowl with ice water.
  2. Bring a pot of salted water to a boil and drop shelled fava beans in for 20 seconds.
  3. Drain, transfer to ice water to cool quickly, and drain again.
  4. Slip each bean out of its skin and into a bowl.
  5. Transfer fava beans, two cloves of garlic and lemon juice to a food processor or blender and blend until smooth.
  6. Drizzle in Spectrum® Organic Extra Virgin Olive Oil and blend until emulsified.
  7. Grill or broil the baguette slices until crisp and rub both sides with remaining clove of garlic.
  8. Spread fava bean puree on each of the baguette slices, top with a pinch of shaved pamigiano-reggiano and serve.
