Grilled Quick and Cheesy Quesadillas with Spicy Mango Salsa

Quesadillas

  1. 4 flour tortillas, fajita size, 8-inch
  2. 4 oz. (1 cup) monterey jack cheese, shredded
  3. 2 plum tomatoes, thinly sliced
  4. 1 1/2-2 Tbsp. San-J® Sweet and Hot Chili Sauce
  5. 2 Tbsp. fresh cilantro leaves

Spicy Mango Salsa

  • 1 mango, sliced
  • 1/2 cup cucumber, seeded and diced
  • 2 Tbsp. red onion, diced
  • 1 – 1 1/2 Tbsp. San-J® Sweet and Hot Chili Sauce
  • 1 Tbsp. fresh cilantro, roughly chopped
  • 1 tsp. lime juice
  • 1/2 tsp. ground cumin
  • Salt and fresh ground pepper to taste

Directions:

Quesadillas

  1. Heat grill to medium heat. Place tortillas on work surface.
  2. On half of each tortilla layer 1/2 cup cheese and tomatoes; drizzle with San-J Sweet and Hot Chili Sauce and sprinkle with cilantro leaves. Fold the tortillas in half over filling.
  3. Spray both sides of quesadillas with non-stick cooking spray. Place quesadillas on grill over medium heat; cook until tortillas are golden brown and cheese is slightly melted, 1 to 2 minutes per side.
  4. Cut into wedges. Serve with Mango Salsa.

Spicy Mango Salsa:

  1. In a medium bowl combine all ingredients. Store in refrigerator. Makes 1 cup.
