Low Fat Artichoke Dip


  • 1 can (15 oz.) Eden® Organic Navy Beans, or Pintos, drained
  • 1 can (14 oz.) artichoke hearts, drained
  • 2 Tbsp. lemon juice, or 3 Tbsp. Eden® Extra Virgin Olive Oil
  • 1 clove garlic, pressed
  • 2 whole green onions, chopped
  • 1 Tbsp. parsley, chopped
  • Salt and pepper to taste


  1. Combine all ingredients in a food processor and blend until smooth.

Variations to the basic recipe – add green olives and chives, chopped; fennel and chives, chopped; rosemary, chopped.
Serve with Eden® Chips.

Prep time: 5 minutes.
