Mole Sauce

molesauceIngredients:

  • 3 Tbsp. olive oil
  • 1 cup red onion, finely chopped
  • 4-6 cloves minced garlic
  • 1/2 a bunch fresh oregano
  • 1 tsp. cumin, ground
  • 1/4 tsp. cinnamon, ground
  • 3 Tbsp. chili powder
  • 3 Tbsp. all-purpose flour, optional
  • 4 cups of broth (chicken, beef, or vegetable)
  • 2 oz. Equal Exchange® cooking cocoa with a pinch of sugar
  • Cayenne to taste
  • Whole bunch cilantro – finely chopped

Directions:

  1. Heat oil in a large saucepan over a medium low heat.
  2. Add onion, garlic, oregano, cumin and cinnamon.
  3. Cover and cook until onions are almost tender, stirring occasionally, about 10 minutes.
  4. Mix in chili powder and flour, stir for 3 minutes.
  5. Gradually whisk in broth.
  6. Increase heat to medium high. Boil until reduced, about 35 minutes, stirring occasionally.
  7. Remove from heat.
  8. Whisk in chocolate; season with salt and pepper, and cayenne (if desired).
  9. Add cilantro as a final note.
