Mori-Nu Eggless Salad

morinuegglesssaladIngredients:

  • 1/4 tsp. honey
  • 1/8 tsp. salt
  • 1/4 tsp. turmeric
  • 1/8 tsp. dry mustard
  • 2 Tbsp. sweet pickle relish
  • 1 tsp. minced capers
  • 2 Tbsp. minced celery
  • 3 Tbsp. light soy mayonnaise
  • 1/2 tsp. minced fresh dill weed
  • 1/8 tsp. freshly ground black pepper
  • 1 pkg. Mori-Nu® Silken Lite Tofu (Extra-Firm or Firm)
  • 2 Tbsp. minced scallions (green and white parts)

Directions:

  1. Drain tofu and pat dry with paper towels.
  2. Grate tofu as you would cheese into a bowl.
  3. In another bowl, mix mayonnaise, honey, salt and turmeric.
  4. Add tofu. Mix in remaining ingredients.
  5. Refrigerate for 30 minutes. Serve on sandwiches or as a dip for chips.
