Roasted Garlic Braised Vegetables


  • 1 cup of Consorzio Roasted Garlic Balsamic Marinade
  • 2 large onions
  • 3 zucchini
  • 3 sweet potatoes
  • 1 fennel bulb
  • 3 carrots
  • 4 red potatoes


  1. Slice all vegetables to your liking and place in a bowl.
  2. Mix with marinade to coat evenly. Marinate for 30 minutes in the refrigerator.
  3. In the meantime, preheat oven to 375°. Add red potatoes, carrots and sweet potatoes to a roasting pan for 20 minutes.
  4. Add remaining vegetables and continue to roast until done, approximately 20 minutes.
  5. For some summer fun, try grilling on your barbecue. Combine all ingredients in aluminum foil, cover and grill at medium heat for 45 minutes. Cooking time will vary depending upon thickness of slices and type of vegetable.
