Breakfast Burritos

Ingredients:

  • 2 slices Yves® Veggie Cuisine Canadian Veggie Bacon
  • 1/2 to 1 tsp. olive oil
  • 2 medium eggs or 2 egg whites
  • 1/4 cup salsa
  • 1/4 cup chopped scallion
  • 1/4 cup shredded cheddar cheese (optional)
  • 2 (10 inch) whole-wheat tortillas
  • pinches of salt and pepper

Directions:

  1. In large, nonstick skillet, saute Yves® Canadian Veggie Bacon in oil over medium heat, one minute each side.
  2. Remove from skillet and slice into diagonal pieces.
  3. Whisk eggs, salt and pepper with fork for one minute.
  4. Scramble eggs over medium heat.
  5. Remove eggs.
  6. Place one tortilla in skillet over low heat.
  7. Spoon on half the eggs in a strip.
  8. Add half the salsa, scallions, cheese (if using) and Yves® Veggie Bacon.
  9. Slide tortilla onto cutting board.
  10. Fold right side toward center.
  11. Roll tortilla over filling and away from you.
  12. Repeat for second tortilla.
