Cranberry Orange Scones (Gluten-Free)

Thanks to Pamela’s for this yummy recipe!

Ingredients:

  • 2-1/3 cups Pamela’s Baking & Pancake Mix
  • 1/3 cup plus 1 Tbsp. sugar
  • 1 tsp. baking powder
  • 1/2 cup cranberries
  • 4 Tbsp. butter
  • 1 egg, beaten
  • 2/3 cup milk
  • 1 Tbsp. orange zest

Directions:

  1. Mix the dry ingredients together.
  2. Cut in the butter using two knives.
  3. Add the milk and beaten eggs.
  4. Mix together with a fork. Dough will be thick.
  5. Drop large, tall dollops of dough (scones will spread when baking) onto lightly greased baking sheet.
  6. Bake in a preheated 375° oven for 15-17 minutes.

Servings: 10-12 scones

Additional Notes: For Current Scones, replace cranberries with 1/2 cup currents, orange zest is optional for this recipe.
