Gingerbread Waffles

Ingredients:

  • 6 cups all-purpose flour
  • 3 cup whole-wheat flour
  • 1 1/2 cup non-fat dry milk
  • 1/2 cup sugar
  • 1/4 cup baking powder
  • 1 tsp. lecithin (either liquid or powdered)*
  • 2 Tbsp. cinnamon
  • 4 Tbsp. powdered ginger
  • 1 Tbsp. salt
  • 1/2 cup milk
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 Tbsp. molasses
  • 2 Tbsp. maple syrup
  • 2 Tbsp. vegetable oil
  • 1 1/2 Tbsp. Ginger People Crystallized Ginger

*If liquid is used, only 1/4 tsp. is added.

Directions:

  1. Mix the dry ingredients together and store in an air-tight container.
  2. Combine the wet ingredients together and whisk until blended.
  3. Stir in 1 1/4 cup of dry mix until combined.
  4. The mix should be thick but still easy to pour. If it is very wet, add a little more of the dry mix.
  5. Cook in a waffle maker following the manufacturer’s directions.
  6. Serve with some butter and real maple syrup.
  7. Enjoy!
