Pancake Enlightenment



  • 2 eggs
  • 1 cup Silk® Soymilk (Vanilla or Plain)
  • 1 cup flour
  • 1 Tbsp. cornstarch
  • 1 Tbsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt (to desired taste)
  • 2 Tbsp. honey
  • 1/4 cup Silk Live® Soy Yogurt (Vanilla or Plain)
  • 2 Tbsp. canola oil
  • 3/4 cup blueberries


  1. Beat eggs and Silk® Soymilk in a mixing bowl.
  2. Add flour, cornstarch, baking powder, baking soda, salt, honey, and Silk® Soy Yogurt. Beat well.
  3. Gently stir in blueberries and oil. Cook on a hot griddle.

Servings: 4

Note: You can substitute 3/4 cup sliced bananas, strawberries, raspberries, etc.
