Chilled Smokey Raspberry Soup


Recipe submitted by Marwin B. of Chicago, IL, for the Mambolicious Recipe Contest ’09.


2 cups fresh raspberries

1/4 cup of blackberries

1/4 cup of blueberries

1/4 cup cranberry juice

1/2 cup of Brown Cow Plain Yogurt

2 medium peaches sliced

1 cinnamon stick

5 whole cloves

1/4 cup sugar

1 tbsp of chipotle adobo sauce

1 cup of steel cut oats

2 mint leaves for garnish

1 cup of ice


Bring 2 cups of water to a boil and cook oatmeal according to package instructions.

In a saucepan, heat 1 1/2 cup of raspberries, peaches, cranberry juice, sugar, cinnamon stick, adobo sauce, and cloves and cook on medium heat for 20 minutes, stirring frequently.

Set mixture aside and allow to cool.

Once cool, remove cinnamon stick and cloves from fruit mixture.

Then place mixture in blender with ice and puree to smooth consistency.

Add oatmeal and blend slowly to desired consistency. Stir in yogurt.

Serve soup in bowl with remaining raspberries and, blackberries, and blueberries.

Garnish with chipotle strips and mint leaves.

Servings: 4

Chef’s Note: To make it a bit more indulgent can add 1/2 bar of Equal Exchange Chocolate Bar to fruit mixture and melt it down as part of the sauce.
