Chocolate Soy Pudding

Ingredients:

  • 1/3 cup cocoa
  • 3/4 cup sugar
  • 1/4 tsp. salt
  • 1/4 cup corn starch (1/3 cup if using as pie filling)
  • 3 cups White Wave® Silk Soy Milk
  • 3 Tbsp. margarine
  • 1 1/2 tsp. vanilla

Directions:

  1. Combine cocoa, sugar, salt and cornstarch in pot. Mix well.
  2. Whip in soy milk. Bring mixture to a boil over medium heat, whipping constantly, then lower heat and cover.
  3. Simmer for 5 to 10 minutes. Remove from heat.
  4. Whip in margarine and vanilla. Pour into bowls or baked pie crust.
  5. Chill for 3 hours.

Servings: 4 (1 cup each)
