Coconut Custard Pie

Ingredients:

  • 1 cup Tropical Pepper® Coconut Milk
  • 4 eggs
  • 1 cup 1% milk
  • 1/4 cup softened butter
  • 3/4 cup raw sugar
  • 1 tsp. vanilla
  • 1/2 cup all natural buttermilk baking mix
  • 1 1/3 cups coconut

Directions:

  1. Heat oven to 350°F. Grease 9 inch pie plate.
  2. In blender, mix milks, sugar, baking mix, butter and vanilla for 3 minutes on low speed. Pour into prepared pie plate. Top with coconut.
  3. Bake 40 minutes until a knife inserted 1/2 way between center and edge comes out clean and top is golden.
