Flourless Almond Butter, Chocolate & Ginger Chunk Cookies

Recipe submitted by Suzanne R. of Ramona, CA for the Mambolicious Recipe Contest 2009.


  • 2 Cups Smooth Raw or Roasted Almond Butter
  • 2/3 Cup Sugar
  • 2 tsp. Baking Soda
  • 2 Extra Large Eggs – lightly beaten
  • ½ cup Equal Exchange Organic Very Dark Chocolate – Chopped into chunks (add more if you like it real chocolately!)
  • 1/4 cup The Ginger People Baker’s Cut Crystallized Ginger


  1. Preheat the oven to 350◦ F.
  2. In a medium bowl, mix the almond butter with the sugar, baking soda and egg.
  3. Stir in the chopped chocolate and ginger.
  4. With your hands, (this gets gooey), roll the batter into individual balls – about 2 ” wide.
  5. Set the balls onto ungreased baking sheets.
  6. Bake for 15 minutes.
