Fudge-Yum Brownies

Submitted by Karla A. of Otega, NY, for the Mambolicious Recipe Contest 2009

  • 3 10.5-oz. bars Equal Exchange Dark Chocolate with Almonds
  • 1 cup Sugar in the Raw
  • 1/2 cup natural unsweetened applesauce
  • 2 tsp. unsalted butter
  • 3 egg whites
  • 1 1/4 cups all-purpose flour
  • 1/4 cup Equal Exchange Baking Cocoa
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1 tsp. vanilla

  1. Preheat oven to 350° F. Grease 9″ X 9″ baking pan. (You may use fat free cooking spray.)
  2. Chop candy bars into small pieces (about the size of a pea). Divide in half.
  3. Separate eggs. Stir whites together lightly with fork.
  4. In medium bowl combine flour, baking cocoa, salt, baking soda. Set aside.
  5. In saucepan, on low heat, melt butter, 1/2 of chopped chocolate bars, applesauce and sugar. Stir constantly. When melted remove from heat. Cool slightly. Stirring a little will help remove some heat.
  6. Gently whisk in egg whites and vanilla.
  7. Mix together with dry mixture. Add second half chopped chocolate bars.
  8. Pour into 9X9 baking pan.
  9. Bake brownies at 350° F for 23 to 25 minutes or until the top begins to crack. Toothpick test for doneness will not work with these.
  10. Remove from oven. Cool. Cut into 12 equal pieces.
