Kashi Kaffree Mocha Almond Muffins

Ingredients:

  • 1 cup whole wheat flour
  • 1 1/2 cups Kashi® Good Friends Cereal, crushed with a rolling pin
  • 1/4 cup raw almonds, chopped
  • 1 1/2 cups 1% fat, vanilla or chocolate almond milk or soymilk
  • 2 tsp. baking powder
  • 1/4 cup honey
  • 1/4 tsp. salt
  • 2 egg whites
  • 2 1/2 Tbsp. baking cocoa or carob
  • 1/4 cup safflower oil
  • 2 Tbsp. Natural Touch® Kaffree Roma (instant roasted grain beverage), dissolved in 1 Tbsp. hot water
  • 1/2 cup evaporated cane juice crystals (Sucanat® or Florida Crystals®)

Directions:

  1. Preheat oven to 400° F.
  2. Stir together flour, evaporated cane juice crystals, baking powder, salt, and cocoa or carob powder, and chopped almonds.
  3. In another bowl, combine Kashi® cereal, almond milk, dissolved Natural Touch® Kaffree Roma and honey. Let stand until cereal softens.
  4. Add egg whites and oil and beat until mixed.
  5. All at once, add dry ingredients and stir only until combined.
  6. Oil or lightly spray (12) muffin cups. Fill to 2/3 full.
  7. Bake at 400° F for 20 – 25 minutes or until lightly browned.
