Macadamia Raspberry White Chocolate Cookies

Ingredients:

  • 1/4 cup Crofters® Red Raspberry Conserve or Crofters Red Raspberry Fruit Spread
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1/3 cup white sugar
  • 1/3 cup butter
  • 1/3 cup packed brown sugar
  • 1 tsp. vanilla extract
  • 1 tsp. baking soda
  • 1 cup chopped macadamia nuts
  • 8 oz. white chocolate, chopped

Directions:

  1. Preheat oven to 350° F.
  2. Cream butter and sugars.
  3. Add egg and beat in.
  4. Add vanilla and raspberry conserve or fruit spread. Mix well.
  5. Mix together flour and baking soda.
  6. Gradually add flour mixture to batter.
  7. Stir in nuts and white chocolate.
  8. Drop by rounded teaspoons onto lightly greased cookie sheets, about 2 inches apart.
  9. Bake for 8 to 10 minutes. Don’t overbake.
  10. Cool on racks.
