Maple, Nut and Fruit Couscous Pudding

Maple Nut Fruit Couscous Pudding

Self described as “so delicious as well as healthy,” this recipe for dessert with a twist was a total surprise to us! Roxanne’s recipe surely sounded strange on paper, but we decided to give it a try and apparently so did everyone else. We cooked it up, mixed in the yogurt, and let it chill in the refrigerator. The results were delicious! We were pleasantly surprised that this dessert could easily be eaten for breakfast or for a midday snack! Highly nutritious and most Mambolicious!

Ingredients:

  • 2 cups apple juice
  • 1/4 cup maple syrup
  • 1/2 tsp. maple extract
  • 1- 10 ounce box quick-cooking couscous
  • 1/2 cup chopped pitted dates
  • 1/2 cup chopped moist dried black figs
  • 1/2 cup snipped dried apples
  • 1/4 tsp. each ground cinnamon, nutmeg and cloves
  • 2 cups Brown Cow Cream® Top Maple Yogurt
  • Walnuts
  • Ginger chips

Directions:

  1. Combine the apple juice, maple syrup and extract in a large saucepan.
  2. Bring to a boil, then add the couscous, dried fruit and spices.
  3. Cook according to package instructions.
  4. Combine the yogurt, walnuts and ginger chips in a small bowl.
  5. To serve fluff the couscous with a fork and top each serving with yogurt mixture.
