Oregon Chai Apple Pie Coffee Cake

Ingredients:

Cake:

  • 1/2 cup Oregon Chai® Original Concentrate
  • 1 1/4 cup flour
  • 1/2 cup sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 cup butter
  • 1 egg
  • 1 tsp. vanilla extract
  • 1/2 tsp. baking soda

Topping:

  • 1/2 cup flour
  • 1/2 cup & 2 Tbsp. packed brown sugar
  • 3 Tbsp. butter

Filling:

  • 2 cups apples, pared, cored and sliced thin
  • 1/4 cup Oregon Chai Original Concentrate

Directions:

  1. In large bowl, combine flour, sugar, baking powder, soda, salt and cinnamon.
  2. Add butter and mix until crumbly.
  3. In a separate bowl, mix together Oregon Chai Original concentrate, egg and vanilla.
  4. Blend into flour mixture and spread in a 9″ x 9″ greased baking pan or into a small bundt pan.

Filling:

  1. In a saucepan saute apples in butter for approximately 2 minutes.
  2. Add Chai concentrate, cover and continue to cook for 2 more minutes.
  3. Spread over batter.

Topping:

  1. In small bowl, mix flour, brown sugar and butter until crumbly.
  2. Place on top of apple mixture.
  3. Bake at 350°F for about one hour or until the top is golden brown.
  4. Test by inserting a toothpick 1″ from edge, it should come out with moist crumbs.
