Organic Banana Chocolate Raspberry Brownies


Submitted by Erika A. of Cupertino, CA, for the Mambolicious Recipe Contest 2009.


  • 7 oz of Equal Exchange: Organic Very Dark Chocolate 71% Cacao (2 bars)
  • 1 1/2 ripe organic bananas
  • 1 cup organic raspberries
  • 2 organic brown eggs (separated)
  • 3 Tbsp. Equal Exchange: Organic Baking Cocoa
  • 1/4 cup organic butter
  • 1/4 cup organic sugar


  1. Preheat oven to 350° F. Grease a 9 x 9-inch pan. Cut chocolate into small pieces.
  2. Melt butter and chocolate in a medium heat-proof bowl over a saucepan of simmering water. Once melted, removed from heat and set aside.
  3. Separate eggs into two bowls. Add 1/8 cup of sugar to the egg whites and 1/8 cup sugar to the egg yolks.
  4. With a hand mixer beat egg whites until they are soft peaks and set aside.
  5. Mash 1 banana and add to the egg yolks/sugar mixture.
  6. Slowly mix together the banana mixture with the slightly cooled chocolate. Then add the baking cocoa & stir till completely mixed in.
  7. Fold the egg whites into the chocolate mixture.
  8. Next, add in the raspberries.
  9. Finally, pour the batter, place it in the oven and bake for about 17 to 20 minutes.
  10. Before serving, cut up the extra banana or take the raspberries and put on top of brownies.
