Peanut Butter Blondies


  • 1/4 cup Organic Valley Butter, melted
  • 1 Tbsp. molasses
  • 1/2 cup peanut butter
  • 1 Tbsp. plus 1/2 tsp. Organic Valley Soy Milk
  • 1 Organic Valley Egg
  • 1 cup evaporated cane juice
  • 3/4 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1 tsp. baking powder
  • 1/2 tsp. sea salt


  1. Preheat oven to 350º F. Oil an 8″” x 8″” x 2″” baking pan.
  2. In a large bowl, put melted butter, molasses, peanut butter and soy milk. Stir with wooden spoon.
  3. Put the egg into a small bowl and stir with fork until it is all one color. Add to the large bowl and stir again.
  4. Add evaporated cane juice and stir again till blended.
  5. Add remaining ingredients, and stir together.
  6. Spoon into prepared pan and flatten out with back of spatula until fairly smooth. Bake about 14 minutes, or until lightly browned and toothpick inserted comes out clean.
