Pomegranate Chocolate Chip Frozen Yogurt

Ingredients:

1 quart size container of Brown Cow Cream Top Vanilla yogurt
1/3 cup organic sugar
1/3 cup pomegranate frozen concentrate
3 Tbsp. sour cream
2 oz. Equal Exchange Organic “Very Dark Chocolate” Bar

Directions:

NOTE: The first step needs to be done at least 2- 3 hours ahead of time!

1) Straining the yogurt: You will need a large bowl, a fine strainer and a cheese cloth. Place the strainer hanging on the bowls edge, drape the cheese cloth over the strainer, carefully dump into the cloth covered strainer the entire quart of yogurt. Place in the refrigerator. (You may want to cover the yogurt with plastic wrap f you leave it for more than a couple hours so that it does not absorb strange tastes).

2)Take the frozen concentrate and place it on the counter to thaw.

3) (2 hours or more later…) Take the yogurt from the fridge and discard the water that has settled in the bowl. You’ll be amazed at how much is in there! Now dump the strained yogurt into the bowl. It should be so thick that it loosely holds it’s shape.

4) Add the 1/3 cup sugar, 1/3 cup pomegranate concentrate and 3 T. sour cream. Whisk to incorporate.

5) Dump the yogurt mixture into your ice cream freezer and follow the manufacturers directions.

6) While the yogurt is freezing melt the chocolate carefully in a small bowl in the microwave. (Stir to finish melting so as not to overheat the chocolate).

7) Spread the melted chocolate onto some wax paper (approx 12 inches will do) in a nice, thin layer and place it in the refrigerator.

8 ) When the frozen yogurt has finished freezing take the chocolate from the fridge and carefully break it into little pieces by scrunching up the wax paper with your hands.

9) Remove the top of your ice cream freezer (and the stirring attachment) and with a rubber scraper integrate the chocolate bits into the frozen yogurt. Serve now or keep in the freezer until ready to serve!
