The Best Pecan Pie




  • 1 1/2 cups whole-wheat flour, (pastry)
  • 1/3 cup Eden® Extra Virgin Olive Oil
  • pinch Eden® Sea Salt
  • 1/4 cup Eden® Edenblend


  • 1 – 1/2 cups any Eden® Organic Malt Syrup
  • 2 Tbsp. Eden® Agar Agar Flakes
  • 1/4 cup amazake
  • 2 tsp. vanilla
  • 3 Tbsp. Eden® Extra Virgin Olive Oil
  • 3 cups pecans, coarsely minced


  1. Make the pastry: Combine flour and salt in bowl. Cut in oil until the texture of wet sand.
  2. Slowly stir in Eden blend until dough just gathers into a ball. Cover and set aside for 10 minutes.
  3. Make the filling: Combine malt, amazake, oil and agar in a saucepan.
  4. Cook over low heat, stirring frequently, until the agar dissolves, about 20 minutes. Increase heat and cook until the mixture foams.
  5. Remove from heat and whisk in vanilla. Stir in pecans.
  6. Preheat oven to 350° F and lightly oil a 9 inch pie plate.
  7. Roll out dough, between 2 sheets of parchment, into a round. It should be larger than the pie plate. Transfer dough to the pie plate, forming it to the sides and bottom, without stretching it. Turn excess up over edge and crimp with your fingers to form a decorative rim.
  8. Pierce in several places with a fork. Spoon filling evenly into pie shell.
  9. Bake for about an hour, or until the filling is set. The filling may seem soft (but not loose) after an hour…that’s okay…it will set as it cools.
  10. Cool completely before slicing.
