Boca® Lasagna

Ingredients:

  • 2 cups (16 oz.) Boca® Meatless Ground Burger
  • 2 egg whites (or 1/4 cup egg substitute or 1 whole egg)
  • 1 jar (28 oz.) spaghetti sauce
  • 1/2 cup shredded Parmesan cheese
  • 1 tsp. dried oregano (optional)
  • 2 Tbsp. chopped fresh basil or 1 tsp. dried basil
  • 8 oz. lasagna noodles (8 to 10), cooked, drained
  • 1 garlic clove, minced
  • 1 container (16 oz.) part skim ricotta cheese
  • 2 cups (16 oz.) reduced fat shredded mozzarella cheese, divided

Directions:

  1. Heat Boca® Meatless Ground Burger in skillet sprayed with no stick cooking oil 4 to 5 minutes.
  2. Add spaghetti sauce and oregano; simmer 6 to 8 minutes or until thoroughly heated.
  3. Mix ricotta cheese, parmesan cheese, egg white, basil, and garlic in small bowl.
  4. Spread 1 cup sauce mixture in bottom of 13 x 9 inch baking dish.
  5. Top with half of noodles, half of ricotta cheese mixture, 1 cup sauce mixture, and 1 cup mozzarella cheese; repeat layers.
  6. Heat oven to 375° F.
  7. Bake 30 to 35 minutes or until thoroughly heated.
  8. Let stand 10 minutes before serving.
  9. Make Ahead Tip: Prepare as directed except for last layer of mozzarella cheese.
  10. Refrigerate covered up to 24 hours.
  11. Bake covered 45 minutes.
  12. Top with cheese; continue baking 5 minutes.
