Brown Rice Black Bean Burrito



  • 1 Tbsp. oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 tsp. chili powder
  • 1/2 tsp. cumin
  • 3 cups cooked Texmati Brown Rice
  • 1 15- or 16-oz. can black beans, drained and rinsed
  • 1 11-oz. can corn, drained
  • 6 8-inch flour tortillas
  • 3/4 cup or 6 oz. shredded reduced-fat cheddar cheese
  • 2 green onions, thinly sliced
  • 1/4 cup plain low-fat yogurt
  • 1/4 cup prepared salsa


  1. Heat oil in large skillet over medium-high heat until hot. Add onion, garlic, chili powder and cumin.
  2. Sauté 3 to 5 minutes until onion is tender. Add rice, beans and corn.
  3. Cook, stirring 2 to 3 minutes until the mixture is thoroughly heated. Remove from the heat.
  4. Spoon 1/2 cup of the rice mixture down the center of each tortilla.
  5. Top each with 2 Tbsp. cheese, 1 Tbsp. green onion and 1 Tbsp. yogurt. Roll the tortilla up and top with 1 Tbsp. salsa.

    Thank you mambo sprouts, right now the printer on the computer I am using does not work, but that is in my apts. building and that is only one of the problems here and etc. But thank you for this wonderful recipe, and i will print it out. I like mexican food, and this recipe is something that I can eat, and it is considered kosher. you keep it coming. Vegetarian can be kosher.
