  • 1 cup low-fat mayonnaise
  • 1 Tbsp. garlic powder
  • 1 Tbsp. paprika (optional)
  • 1 tsp. crushed fennel seed
  • 2 tsp. sage, crumbled
  • 3 Tbsp. water
  • 4 chicken thighs, skin removed
  • 2 cups Ian’s Italian Panko Breadcrumbs
  • Kosher salt and freshly ground pepper, to taste

  1. Preheat the oven to 350° F.
  2. In a large bowl combine the mayonnaise, garlic powder, paprika, fennel, and sage.
  3. Mix with water, 1 Tbsp. at a time, to make it the consistency of heavy cream; season with salt and pepper.
  4. Add the chicken pieces; coat well with the mayonnaise mixture.
  5. Lightly coat a nonstick baking sheet with cooking spray.
  6. Pour Ian’s Italian Panko Breadcrumbs onto a plate.
  7. Toss the chicken thighs, one at a time, in the crumbs to completely coat.
