Fabulous Fettuccine with Spinach


  • 1 lb fettuccine
  • 1 lb frozen spinach, thawed
  • 1/2 cup Soy Dream® Beverage, Original Flavor
  • 1/4 cup fresh basil leaves
  • 1/4 cup grated parmesan cheese
  • 1 Tbsp. olive oil
  • 4 whole cloves sauteed garlic


  1. Prepare fettuccine according to directions on package.
  2. Place remainder of ingredients in food processor and chop (do not overmix).
  3. When fettuccine is done, toss with spinach mixture.
  4. Optional: top with pinenuts and fresh cracked pepper.

Servings: 4

Note: By NOT adding the parmesan cheese/this recipe is cholesterol-free
