Grilled Salmon with Yogurt Dill Sauce

Salmon:

Ingredients:

  • 1 lb. salmon fillets
  • 2 Tbsp. olive oil
  • 2 Tbsp. fresh lime juice
  • 1/4 tsp. kosher salt

Directions:

  1. Whisk together olive oil, fresh lime juice and kosher salt.
  2. Marinate salmon fillets in this mixture for 20 minutes.
  3. Grill salmon until cooked through (about 4 minutes per side).

Sauce:

Ingredients:

  • 1 cup Brown Cow plain yogurt
  • 2 cloves garlic, peeled
  • 1 tsp. kosher salt
  • 1/2 cup fresh chopped dill
  • Dash of hot sauce

Directions:

  1. Strain yogurt in a strainer lined with a coffee filter to drain for 20 minutes.
  2. Mash garlic cloves into salt to form a paste.
  3. Mix strained yogurt (reduced to about 3/4 cup) with chopped dill and hot sauce.
  4. Serve grilled salmon with generous portion of the yogurt dill sauce and enjoy!
