Italian Chicken, Zucchini and Quinoa

Ingredients:

  • 1/2 cup sun dried tomatoes, chopped
  • 1 cup chicken stock
  • 2 Tbsp. San-J tamari
  • 1/2 tsp. lemon-pepper
  • 2 tsp. Italian seasoning
  • 1 Bay leaf
  • 2 Tbsp. olive oil
  • 1 medium onion, diced
  • 3-4 chicken breasts, legs, wings, etc. cut into bite-sized pieces
  • 2 medium zucchini, diced
  • 1 10-oz. bag frozen spinach
  • 1 cup quinoa, cooked according to package directions

Directions:

  1. Combine first six ingredients, and set aside.
  2. Heat oil in skillet. Add onion and cook until translucent
  3. Add chicken and cook until no longer pink. Add zucchini, garlic, and first six ingredients.
  4. Cook until zucchini is almost done. Add spinach and heat through. Serve over quinoa.
