Macadamia Nut Panko Crusted Grouper

  • 3 Tbsp. cream of coconut
  • 1 3/4 cup macadamia nuts, finely chopped
  • 6 6-oz grouper fillets
  • 3/4 cup Ian’s Panko Breadcrumbs
  • 2 1/2 Tbsp. flour
  • 3 Tbsp. butter
  • Light olive oil for brushing
  • Salt and pepper

Directions: Preheat oven to 425° F.

  1. In a bowl, combine Ian’s Panko Breadcrumbs, macadamia nuts, flour, and butter and set aside.
  2. Place a piece of aluminum foil on a baking sheet and brush it liberally with light olive oil.
  3. Salt and pepper the grouper on both sides and place on the foil.
  4. Bake for 5 minutes. Remove Grouper from the oven and brush each fillet with the coconut milk on both sides.
  5. Coat the Grouper with equal servings of the nut mixture and be sure to press the mixture over both sides.
  6. Return to the oven and bake for 5 to 10 minutes, or until the crust is golden brown.
  7. Remove from oven and serve.
