Mama Pearl’s Country Meat Loaf


  • 3 clove of minced fresh garlic
  • 1 tsp. minced shallot
  • 1/2 cup of fine diced sweet onion
  • 2 tsp. oil
  • 1 lb. of lean ground beef
  • 1 lb. of ground pork
  • 2 large eggs
  • 1/2 cup of cold water
  • 2 cups on Ian’s® Panko Breadcrumbs (any variety)
  • 2 Tbsp. of prepared tomato sauce
  • 1 cup parmesan grated cheese, if desired
  • 1 Tbsp. salt
  • 1/2 tsp. ground black pepper
  • 1/2 tsp. onion powder


  1. Sautée minced garlic, shallot and fine diced onion in oil until translucent. Let cool.
  2. In a separate bowl, mix all other ingredients.
  3. Add cooled sautéed shallot, onion, garlic to the mix above. Mix until well blended.
  4. Place meat mixture in baking pan approximately 6×10 pan (must pack tightly in pan to avoid cracking).
  5. Bake in preheated oven at 350º F for 30-45 minutes until internal temperature is 165º F.
  6. Let rest before cutting.
