Mediterranean Lentils and Rice

Submitted by Madeleine F. for the Mambolicious Recipe Contest 2009.

Ingredients:

  • 2 Tbsp. olive oil
  • 1 medium onion, chopped
  • 1 cup basmati rice
  • 1/2 cup lentils
  • 2-1/3 cups water
  • 1 tsp. salt
  • 1/2 tsp. cumin seeds
  • Juice of 1/2 lemon
  • 1 bunch coarsely chopped spinach
  • 2 ripe tomatoes, cut in wedges
  • 1 cup Brown Cow Cream Top Plain Yogurt

Directions:

  1. Saute onions in oil until soft.
  2. Stir rice in with onion until coated with oil and onions are transparent.
  3. Stir in lentils and add water, salt, cumin and lemon juice.
  4. Bring to boil and simmer, covered, for 45 minutes.
  5. Remove lid and place coarsely chopped spinach on top of rice/lentil mixture.
  6. Toss lightly and cover until it wilts.
  7. Plate it with plain yogurt and tomato wedges on the side.
