Speedy Stuffed Salmon



  • 1 slice whole grain sprouted bread, cut into 6 inch cubes
  • 1/2 cup Broccosprouts, packed tightly
  • 1/3 cup scallions, thinly sliced
  • 1/4 cup dried cherries
  • 1/4 cup dried apricots, finely chopped
  • 1 egg white, lightly beaten
  • 2 Tbsp. fresh lime juice
  • 12 oz. center cut salmon filet (at least 1-inch thick)


  1. Preheat the oven to 400° F.
  2. In a medium bowl, combine the first 6 ingredients plus 1Tbsp. of the lime juice.
  3. Place the salmon on a flat surface and using a very sharp knife, horizontally slice the filet almost in half, but leave one side intact.
  4. Place the filling in the center and press in gently.
  5. Drizzle all with the remaining lime juice.
  6. Place on a greased baking pan and bake 15-20 minutes.
  7. Divide in half and serve immediately.
