Summer Quiche


Quiche is a dish to serve when the weather is warm outside. Its light taste and texture will keep you from feeling full on a hot summer day.


  • 6 eggs
  • 1 cup Stonyfield Farm® plain yogurt
  • 1/2 Tbsp. basil
  • 1/2 Tbsp. thyme
  • 1/4 tsp. black pepper
  • 2 Tbsp. grated parmesan cheese
  • 1 small zucchini, diced
  • 1 small yellow squash, diced
  • 1 small vidalia onion, diced
  • 3 roma tomatoes, diced
  • 1 unbaked 9-inch pie shell


  1. Preheat the oven to 375º F.
  2. In a large bowl, combine the eggs, yogurt, herbs, black pepper and parmesan cheese. Beat well.
  3. Add the onion, squash and tomatoes, zucchini and stir.
  4. Pour the mixture into the pie shell, and bake for 35 to 45 minutes or until cooked (the quiche should be firm to the touch).
  5. Let cool for 10 minutes before serving.

Servings: 6 to 8

This quiche is made using fresh seasonal vegetables but any of your favorites veggies can be added.
