Twisted Almond Chick’n Curry

Recipe submitted by Carmen R. of North Las Vegas, NV, for the Mambolicious Recipe Contest 2009.

Ingredients:

  • 1 medium onion, sliced
  • 2 Tbsp. olive oil
  • 1/2 Tbsp. Jane’s Krazy mixed up salt
  • 1-2 Tbsp. Ian’s Original Bread Crumbs
  • 1 (6-oz.) container of Brown Cow Plain Cream Top Yogurt
  • 2-3 Tbsp. Thai Green Curry Sauce
  • 1 Tbsp. Jan J Thai Peanut Sauce
  • 1 (6-oz.) Lightlife Smart Strips Chick’n Style with Seasoned Vegetables
  • ¼ Cup of Tamari Roasted Almonds

Directions:

Sauce Preparation:

  1. In large pan, over medium-low heat, sauté onion with half of the olive oil, for about 5 minutes.
  2. Add Jane’s Krazy mixed up salt and sauté for one more minute, add Brown Cow Plain Cream Top Yogurt, then add Ian’s Original Bread Crumbs to thicken the sauce, and simmer for 2 more minutes, stirring constantly, so it does not stick.
  3. Turn off the heat. Blend everything until smooth and set aside.

Chick’n Preparation:

  1. In large pan, over medium heat, sauté the Chick’n with remaining half of the olive oil, add San J Thai Peanut Sauce, cook until Chick’n is heat through.
  2. Add the sauce we prepared and set aside and simmer for 1 minute.
  3. Garnish with crushed Tamari Roasted Almonds.

Servings: 2

Prep Time: 5-10 minutes

Cook Time: 20 minutes
