Meringue Pecans

Prep Time: 20 minutes

Cook Time: 1 hour


  • 2 egg whites
  • 1 cup packed soft brown sugar
  • 1 tspn. Vanilla
  • 1 lb. pecan halves


  1. Preheat oven to 250 degrees.  Beat egg whites until almost stiff.  With beater running, stir in brown sugar 1 Tblsp. at a time then add the vanilla.  Dump nuts into mixture.  Stir well.
  2. Line cookie sheet with aluminum foil.  Place individual pecans in single layer on cookie sheet.  Bake for 30 minutes.  Turn over & bake another 30—35 minutes.  Let sit in oven overnight.
  3. Store in refrigerator for up to one week.


Makes 1 lb of nuts
