Caribbean Cobb Salad


  • 4 cups mixed greens
  • 1/2 cup papaya
  • 1/2 cup green pepper
  • 1/2 cup red pepper
  • 1/2 cup avocado
  • 1/2 cup pineapple
  • 1/2 cup jicama
  • 1/2 lb. small shrimp
  • 1 cup Monterey Jack cheese, diced or shredded
  • 1/4 cup cashew pieces (garnish)


  1. Roast cashew pieces for 8 minutes in 375 oven until golden.
  2. Arrange greens on a large platter.
  3. Form rows with the diced ingredients. Top with cashew pieces.
  4. Pour either Orange Wasabi or Lime-Cilantro Vinaigrette dressings over and serve.
