Harvest Chopped Salad with Balsamic Pumpkin Vinaigrette


  • 2 Tbsp. Organic Pumpkin Oil
  • 2 Tbsp. Organic White Balsamic Vinegar
  • Sea salt and freshly ground pepper to taste

Combine ingredients with a wire whip. Set aside. (Salt and pepper not included in nutritional data).


  • 5 oz. field greens
  • 1 large apple, peeled and diced
  • 2 medium pears, peeled, cored and diced
  • 1/2 red bell pepper, diced
  • 1 stalk celery, sliced
  • 8 oz. cooked chicken or turkey breast, diced
  • 1/4 cup toasted walnuts

Place field greens on large serving platter or bowl. In separate bowl, combine apple, pear, bell pepper, celery and chicken with Balsamic Pumpkin Vinaigrette. Arrange marinated fruit mixture over greens, and top with walnuts
