Healthy Lentil Salad

Submitted by Kathleen V. of Philadelphia, PA, for the Mambolicious Recipe Contest 2009.

Ingredients:

  • 3 cups brown lentils, cooked
  • 1 cup chickpeas
  • 10 cherry tomatoes, sliced
  • 1/2 cup black olives, chopped
  • 1/2 cup red bell pepper, chopped
  • 1 cup carrots, shredded
  • 2 basil leaves, chopped
  • 1/2 cup olive oil
  • 1 Tbsp. Jane’s Krazy Mixed Up Salt

Directions:

  1. Mix all the ingredients together.
  2. Refrigerate until chilled.
  3. You can also add raw broccoli and mushrooms.

Servings: 8
