Potato & Tofu Salad

potato-saladIngredients:

  • 1 cup Nasoya Nayonaise
  • 1/4 cup minced onion
  • 1/4 cup pickles or green olives, chopped
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 1 package (14oz) Nasoya Extra Firm Tofu, diced
  • 1 cup chopped green peppers
  • 1 tsp. curry powder
  • 1 clove garlic, crushed
  • 2 Tbsp. fresh parsley, minced
  • 2 tsp. prepared mustard
  • 3 cups potatoes, cooked and diced

Directions:

  1. Mix all ingredients together, chill and serve.
