Roasted Red Pepper Potato Salad


  • 1 bottle of Seeds Of Change® Roasted Red Pepper Salad Dressing
  • 8 medium-sized new potatoes
  • 3 medium-sized scallions
  • 3 medium-sized celery stalks
  • 3/4 cup feta cheese
  • 1/3 cup black olives


  1. Boil potatoes, then cool and cut into chunks.
  2. Thinly slice scallions and celery.
  3. Mix potatoes, scallions and celery together in bowl.
  4. Pour bottle of dressing over top and mix in gently.
  5. Dice feta cheese and slice olives, then sprinkle over top.
