Santa Fe Pasta Salad

santa-fe-pasta-saladA zesty south-of-the-border salad to spice up your meals.


  • 1 1/2 cups uncooked small pasta shells
  • 1 jar (16 oz.)  medium salsa
  • 1 can (15 oz.) black beans, rinsed and drained
  • 2/3 cup chopped red bell pepper
  • 2/3 cup  frozen organic sweet corn, thawed
  • 1/3 cup sliced ripe olives
  • 3 Tbsp. chopped fresh cilantro


Cook pasta according to package directions; drain. Toss hot pasta with salsa. Stir in beans, bell pepper, corn, olives and cilantro. Cover and refrigerate 4 hours or overnight before serving.
