Spinach and Chicken Salad with Hoisin Dressing

Ingredients:

  • 1 cucumber
  • 1 package (6 oz.) baby spinach leaves
  • 1 large carrot, coarsely shredded
  • 2 cups shredded, cooked chicken
  • 1½ cups seedless red grapes, halved
  • ½ cup chopped fresh cilantro leaves
  • ¼ cup Kikkoman® Hoisin Sauce
  • 2 Tbsp. distilled white vinegar
  • 2 tsp. Kikkoman® Soy Sauce
  • 2 Tbsp. vegetable oil

Directions:

  1. Peel cucumber lengthwise to form stripes; cut in half lengthwise.
  2. Remove seeds, then cut into thin slices.
  3. Mix cucumber with next 5 ingredients.
  4. Combine next 3 ingredients; gradually whisk in oil until well blended.
  5. Pour over salad; toss to coat all pieces.
  6. Serve immediately.
