Tamari Peanut Chicken and Wild Rice Salad

  • 4 cups cooked brown basmati and wild rice mixture, cooled
  • 2 cups cooked cubed chicken breasts, cooled
  • 2 cups frozen peas, thawed
  • 4 stalks celery, diced
  • 3/4 cup roasted peanuts
  • 1/4 cup chopped fresh parsley
  • 3 scallions, sliced thinly (green and white parts)
  • 1 bottle (8oz.) San-J Tamari Peanut Dressing
  • 1/2 cup sun-dried tomatoes packed in olive oil, sliced, drained

Directions:

In a large bowl, combine the first 8 ingredients. Add bottle of San-J Tamari Peanut Dressing. Mix well and serve at room temperature.
