Tempeh On the Green

Submitted by Evelyne B. of Los Angeles, CA, for the Mambolicious Recipe Contest 2009.

Ingredients:

  • 1 head butter lettuce
  • 1 head mache greens
  • ½ cup radish sprouts
  • ½ cup edible flowers
  • 1 shallot
  • 1/2 Tbsp. Dijon mustard
  • 1 1/2 Tbsp. lemon juice
  • 2 1/2 Tbsp. flaxseed oil
  • 1 pkg. Lightlife Flax Tempeh
  • 1 Tbsp. olive oil
  • Salt, to taste

Directions:

  1. Make a dressing with Dijon mustard, lemon juice and flaxseed oil.
  2. Tear butter lettuce into dressing then add mache greens, radish sprouts, edible flowers and chopped shallots.
  3. Saute the sliced tempeh in olive oil. Salt lightly.
  4. Cook until crispy on both sides.
  5. Serve on salad.
