Balsamic Chicken Basil Sandwiches

  • 1/4 cup balsamic vinegar
  • 1 Tbsp. Jane’s Krazy Mixed Up Salt
  • 2 Tbsp. honey
  • 1 lb. chicken tenders or chicken breast, cut into strips
  • 1 Tbsp. olive oil
  • 1/2 cup fresh basil, chopped
  • 1 1/2 cups Brown Cow Cream Top Plain Yogurt
  • 1/8 tsp. sea salt
  • 1/8 tsp. pepper
  • 4 fresh sandwich rolls, sliced
  • 1 fresh tomato, sliced (optional)
  1. Combine balsamic vinegar, honey, and Jane’s Krazy salt in bowl, whisk to combine. Add chicken pieces, making sure to cover every piece in the marinade.
  2. Combine chopped basil with yogurt, salt and pepper. Cover and keep refrigerated until ready to serve.
  3. Heat olive oil in grill pan over moderate heat. Add chicken in a single layer and grill on both sides until done.
  4. To make sandwiches, spread basil yogurt sauce on each side of a sliced roll. Add chicken tenders or slices to fit and top with tomato slices.
