Whole Wheat Bread



  • 2 pkg. active dry yeast
  • 1/4 cup warm water
  • 3/4 cup brown sugar
  • 3 tsp. salt
  • 1/2 cup shortening
  • 2-1/4 cups boiled water
  • 3 cups whole wheat flour
  • 5 cups unbleached white flour


  1. Dissolve yeast in 1/4 cup warm water. Meanwhile, combine sugar, salt, shortening and boiled water; allow to cool to lukewarm.
  2. In a separate bowl, mix whole wheat and white flours.
  3. When liquid is cooled, add 3 cups of the blended flours and beat with electric beater for 2 minutes.
  4. Add dissolved yeast and beat another 2 minutes.
  5. Add remaining flour 1 cup at a time and beat with a wooden spoon.
  6. Turn out onto floured surface and knead in as much flour as needed until stiff enough – about 10 minutes.
  7. Place in greased bowl; cover and let rise until double in bulk – about 1 hour.
  8. Punch down dough and divide into 2 equal parts. Knead lightly and let rest for 10 minutes.
  9. Form into loaves and place in greased loaf pans. Cover and let rise until double.
  10. Preheat oven to 375º F. Bake 10 minutes. Lower temperature to 350º F and continue baking 27 more minutes.
