Cold Avocado Soup

coldavocadosoupIngredients:

  • 1 cup Vitasoy Creamy Original Soymilk
  • 1 large, ripe avocado, pitted and peeled
  • Juice of 2 limes
  • 1/2 large cucumber, peeled and chopped
  • 4 green onions, chopped
  • 2/3 cup water
  • 1/4 cup cilantro leaves
  • 1/4 tsp. salt
  • 1/4 tsp. garlic powder

Directions:

  1. Place Vitasoy Creamy Original Soymilk, avocado, lime juice, cucumber and green onions in blender and blend until smooth.
  2. Add remaining ingredients. Blend briefly, until cilantro leaves are slightly chopped.
  3. Chill 30 minutes before serving. Garnish with cilantro leaves.

Servings: 4 small
